Panch Puran / Five Spice Blend
Panch Puran is a popular Indian spice blend that consists 5 equal measures of coriander seeds, cumin seeds, fennel seeds, kalonji, and fenugreek seeds. This five spice blend is commonly used in Bengali cooking for its unique flavor. In Bengali cuisine, panch puran is usually fried first in cooking oil or ghee and they will start popping immediately. Then add vegetables, especially potatoes, lentils or fish to coat with the spice blend.
